Crafting Time, Re-delivering the Authentic Taste of Korea

Amidst foods that are quickly consumed and easily forgotten, we suddenly found ourselves thinking about flavors that can only be completed by a long wait.
Some call it 'tradition,' while others call it 'fermentation.'
But to us, it was ultimately the most uniquely Korean sensation created by time and human devotion.

The Dott12 project began with the desire to let people experience the depth of Korean Jang (fermented paste) culture once again on today's tables.


Sunchang has long been the heart of Korean fermented paste culture.

For enduring seasons, temperatures, winds, and sunlight, the aging paste was more than just an ingredient; it was closer to a culture embodying the lives and waiting of the Korean people.

We didn’t want to simply 'reproduce' the value of this tradition, but rather re-interpret it through contemporary sensibilities.

To achieve this, we collaborated with local producers and master artisans who have been crafting fermented pastes in Sunchang for decades.

From selecting ingredients to the manufacturing process, we pondered and researched together to encapsulate within a single project the fermentation techniques and traditional sensibilities accumulated over long experience, as well as the philosophy of producers who have preserved quality ingredients.

The brand name 'Dott' is derived from a pure Korean word meaning 'to enhance the flavor.'

And the number '12' symbolizes the fermentation time completed with devotion and waiting over the 12 months of a year.

It is also our philosophy of pursuing depth over speed, and balance over stimulation.


Dott12 focused on exceptional Korean ingredients instead of fancy additives.

To the gochujang, doenjang, and ganjang passed down for generations by the masters of Sunchang, we added roasted sesame seeds and minced garlic, achieving a natural sweetness and rich aroma with blueberries and natural jocheong (grain syrup).

Using only 100% domestic ingredients, we focused on bringing out the natural flavor and nutrition inherent in the ingredients through traditional fermentation methods.


What we wanted to create was not just simple 'ssamjang.'

It was a project to let more people naturally experience the depth and class of Korea's fermentation culture in their daily lives.




A savory umami that lingers longer in memory than a spicy, sharp taste,

A flavor that shines brighter on everyday tables than on special occasions.

Dott12 pairs naturally with meat, rice, salads, and vegetables, demonstrating new possibilities for Korean fermented paste culture.


We believe tradition is not about being old, but about surviving long.

Dott12 is a small endeavor to carry forward Korean time and devotion in today's way.
